Make souvlaki yourself: how does marinating work?

In this recipe we opted for a very simple and fine solution : olive oil, lemon juice and freshly squeezed garlic. Salt and pepper should not be missing, of course. The sliced ​​and marinated meat then goes into the fridge for at least two hours .

The big challenge when grilling souvlaki

Well, unlike a pig's neck, a pork salmon is a very fat-free affair . Conversely, this means: the risk of "drying out" when grilling * is very high. Therefore: At medium temperatures around 250 degrees, grill the 1 to 1.5 centimeter thick slices on the skewer for three to four minutes.

  • 900 g pork salmon (alternatively pork neck)
  • 1 tbsp oregano
  • 2 cloves of garlic
  • 5 tablespoons of olive oil
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 lemon (juice) *

This is how you can grill souvlaki easily at home

  • Cut the meat into slices about 1.5 to 2 cm thick and then into pieces of the same size with a diameter of about 4 to 5 cm.
  • Mix the olive oil, lemon juice, salt, pepper, oregano and pressed garlic * and marinate the meat in it. (At least 2 hours)
  • Put the meat (150 g per skewer).
  • Grill the souvlaki at 250 degrees for three to four minutes on each side.
