Potatoes, that product that everyone likes almost without exception, will be the protas of this new live appearance today Wednesday at 20:00. New potatoes, more specifically, which are in the middle of the season. As you will perfectly know if you are a tuber savant or if you read this guide that we published a long time ago, these potatoes are the youngsters of the family: smooth, with thin and smooth skin and light-colored meat, they have a mild or slightly sweet flavor and they contain more water and less starch than "old" potatoes. Its texture is firmer, so they remain whole after being cooked, and are ideal for steaming or frying.
That is why they come from pearls for the recipe that we are going to prepare, a classic from the Spanish taperĂo: fried potatoes. With an extra trick to be able to leave them almost completely ready and serve them whenever you want.
