An annual production of 2 billion, 62,000 tons of exports for a value of over 200 million and a per capita consumption of 3 kg: these are the figures of the packaged ice cream industry in Italy, made known today by the Italian Gelato Institute ( Igi), who presented the "Nutrition & Ice Cream" dossier in an online event.
Drafted by a group of experts, the dossier presents the nutritional values and unmasks the fake news on packaged ice cream, one of the products that has always marked the consumption of the summer season more than others. History, production cycle and food safety are the other issues addressed in the dossier, together with responses to new market needs, such as the increase in products for intolerants with the use of almond and soy milk.
Among fake news, it is denied that preservatives are used in the preparation of ice creams because it is the cold that preserves it. Also denied the news that it is not recommended for pregnant women because the use of milk and eggs used is not raw, but is pasteurized.
