    The reason I always keep puff pastry in the freezer is that it's most fun to make a whole tray of crispy golden pastry in a few minutes of work. When friends or guests come by surprise, I put a tray in the oven and close a corner. The filling also changes many times depending on what is in the house. This time I opted for a filling of sweet potatoes with fried onions and kashkabal.

    Tip: When in a hurry, even thawing the dough for half an hour at room temperature will do the job great.

    Family sweet potato borax

    Ingredients

      • 1 pack of puff pastry (thawed overnight in the refrigerator or half an hour at room temperature)
      • 1 diced onion + a little oil for frying
      • 2 large sweet potatoes
      • 1 tablespoon fresh thyme without the stems
      • 1 teaspoon salt
      • 1 teaspoon ground black pepper
      • 1 egg
      • 150 grams of grated kashkabal cheese
    • For coating

      • 1 beaten egg

    Preparation

    How to make family sweet potato borax?

    • 1 Cook the sweet potatoes in their skins. Peel and mash.

    • 2 In a pan with a little oil fry the onion until golden.

    • 3 In a large bowl, mix together the sweet potatoes with the fried onions, spices, egg, thyme and kashkabal.

    • 4 Preheat oven to 170 degrees, line a pan with baking paper and cut the puff pastry in half.

    • 5 Place half of the puff pastry on the baking paper. Arrange the sweet potato filling along the entire leaf spread on the pan and carefully cover the other leaf.

    • Refrigerate for 15 minutes.

    • 7 Brush with beaten egg, divide the pastry into cubes with a sharp knife and sprinkle with sesame seeds.

    • 8 Bake in the oven for about half an hour.

    • 9 After baking, go over all the pastries with the knife and serve hot.

    • 10 Can be frozen after baking in an airtight box.

    • 11 Variety: The filling can always be replaced with marble in the house - zucchini, spinach or potatoes.
