    If you are used to incorporating whole rice only as an addition to meals or stuffings, you will be surprised to find out how delicious it is in patties. Oren Luxenburg, chef and host of the podcast 'Talk It's Not Greasing', adds to the whole rice patties mixture also roasted almonds, garden peas, chickpea flour and curry and creates a delicacy full of nutritional values. He serves them alongside a spiced yogurt dip.

    Whole rice patties with peas and almonds

    Ingredients

      • ½1 cups full round rice
      • 1 egg
      • 1 green pea (frozen and thawed or fresh)
      • ½ Finely chopped green hot pepper
      • Roasted almond chips
      • ½ Finely chopped green onion
      • 3 tablespoons chickpea flour
      • 1 tablespoon yellow curry spice
      • Salt
      • Ground black pepper
      • Frying oil
    • For spicy yogurt

      • 400 ml yogurt (2 containers)
      • 1 green zucchini
      • 8 fresh radishes
      • 1 clove of crushed or grated garlic
      • From salt

    Preparation

    How to make whole rice patties with peas and almonds?

    • 1 for spicy yogurt: Grate the zucchini and radishes and squeeze well from the liquids. Mix with the garlic and salt yogurt and place in the refrigerator for half an hour to absorb flavors.

    • 2 For patties: Prepare the rice according to the preparation instructions of the package. 5 cups of cooked rice should be obtained (it is possible and desirable to use rice from yesterday).

    • In a food processor, grind one cup of the prepared rice until you get a dough.

    • 4 Transfer the ground rice to a bowl, add the rest of the cooked rice and mix with the rest of the patty ingredients.

    • Using a wet hand, form patties of your favorite size and fry in shallow oil (which reaches half the height of the patties) over medium heat for about 5 minutes. Turn and fry for another 5 minutes until the patties are browned.

    • 6 Serve on top of the spiced yogurt.

    • 7 For baked patties: Preheat oven to 190 degrees, transfer the patties to a baking pan, brush each patty with a little olive oil and bake for 20 minutes.
