How to bake the seltzer cake

  • Preheat your oven to 175 degrees top / bottom heat.
  • Beat the eggs with the sugar and vanilla sugar until frothy . This works best with the whisk attachment on your hand mixer.
  • Add the lemon juice and zest, and then the oil.
  • Mix the flour with the baking powder and gradually stir it into the batter. You can do this by hand or use the dough hook on your hand mixer.
  • Finally, stir in the mineral water by hand .
  • Spread the dough on a well-greased baking sheet or a baking sheet lined with baking paper.
  • Bake the cake for about 30 minutes and do the chopsticks test at the end of the cooking time.
  • Quick and easy: this is how you can vary the seltzer cake

After the cake has been baked, you can refine it with various glazes or toppings. The cake is traditionally coated with a lemon icing. But an orange sugar icing or a buttercream that you mix with rum or cognac also go great with this classic cake - especially if you also sprinkle hazelnut brittle on top.

The seltzer cake is also a good base for a fruit cake. You can mix the fruits into the batter beforehand. Blueberries, canned mandarins and other fruits are suitable for this . After baking, you can also coat it with pudding cream, top it with fruit and then cover it with cake icing. There are no limits to your imagination and so you can bake the simple seltzer cake again and again without it getting boring.
