British chef Jamie Oliver has a new food program born in the days of the Corona and its whole purpose is to cater to the hungry people in the house. In the program Jamie cooks from home (Keep Cooking and Carrying On). Oliver teaches to prepare satisfying and delicious dishes from ingredients that we all have at home with special thought for creative solutions.

So how do you prepare a satisfying dish for the whole family and on the way enrich it a bit with vegetables? Oliver opens a refrigerator and makes a dreamy pasta pastry from everything he finds inside including cauliflower and leeks. No leeks? Replace the onion and the cauliflower can be replaced with any vegetable (everything is detailed in the recipe). Not enough milk left to cook? You can convert half the amount to water. And what do you do with the 'chic' of bread that no one eats? Dry on the window sill and make a crust of spicy bread crumbs. Do not worry, even regular bread crumbs will do the job - the main thing is that you cook, eat and enjoy.

Ingredients

    • 15 grams of butter
    • 1 stalk leek finely chopped
    • 1 Branch Celery (Authority)
    • 1 unit cauliflower
    • 450 grams of pasta (any pasta in the house)
    • 1 tablespoon flour
    • 1 liter of milk (you can replace half the amount with water, according to what is in the house)
    • 1 teaspoon mustard
    • 100 grams of grated hard cheese of various types (such as cheddar, mozzarella, feta, halloumi, parmesan - whatever is in the house)
    • 100 grams of dry bread or bread crumbs in the same amount
    • 2 cloves chopped garlic
    • Olive oil
    • Salt
    • black pepper
    • Chopped herbs such as thyme or oregano (or a mixture of dried herbs)

Preparation

How do you make a recipe for Mac & Cheese with Jamie Oliver's Cauliflower and Cheese?

  • 1 Preheat oven to 180 degrees.

  • 2 Heat the butter in a large, wide pot (like a saucepan) and add the leeks. Stir and meanwhile chop the celery. Add it too and mix again.

  • 3 While the leeks and celery are evaporating in the butter, break up the cauliflower head into flowers. All the parts we are used to throwing away - the 'stems' and leaves, are also chopped and added to the pot. Cook while stirring for about 10 minutes (keep the flowers for the next step).

  • 4 Meanwhile, cook the pasta for about 8 minutes in plenty of salted boiling water. Strain and keep a cup of the cooking water (they are rich in starch).

  • 5 Transfer the cooked pasta to a 25 * 35 cm baking pan or divide between several smaller pans.

  • 6 When the vegetables are in the pot are soft, add a heaping tablespoon of flour and mix well for 30 seconds. Pour in the milk (or milk and water) and continue to mix well. Bring to a boil and cook together for 5 minutes.

  • 7 Meanwhile, cut the cauliflower flowers into 2 cm thick slices and add them to the pot along with a teaspoon of mustard, salt and pepper. Let the sauce bubble and thicken and stir occasionally.

  • 8 Remove the vegetable pot and the batter formed from the heat, add in the grated cheeses and mix well (save some of the cheeses for the end). Anyone who likes his sauce creamy and smooth, can grind it at this point, but it is not mandatory.

  • 9 Pour the cheese and vegetable sauce over the pasta. If there is a lack of liquid, pour in the pasta cooking water that we kept aside (everything will thicken together during baking). Set aside.

  • 10 In a food processor grind the dry bread into crumbs or beat with a cup or rolling pin under a towel. Add the olive oil, herbs, garlic and salt and grind or mix everything together.

  • 11 Sprinkle the spiced bread crumbs we made over the pasta and sprinkle some more of the grated cheese we kept.

  • Bake for about 30 minutes in the hot oven or until everything is golden and bubbling.

  • 13 For those who do not have all the vegetables in the fridge: You can use pumpkin or broccoli instead of cauliflower and replace the leeks with regular onions.

  • 14 For those who do not eat gluten: Gluten-free pasta and flour can be replaced. The bread crumbs can also be replaced or given up. It's still very tasty.
