Recipe for quick pumpkin soup with curry: You need these ingredients

  • 600 g pumpkin *, e.g.

    B. Hokkaido

  • 1 onion

  • 1 leek

  • 1 apple (sour, e.g. Boskoop)

  • 2 tbsp olive oil

  • 1 tbsp brown sugar

  • 1 l vegetable stock

  • salt

  • pepper

  • 2 teaspoons of curry powder

  • 2 tbsp pumpkin seeds  

  • 100 g cream

Prepare a recipe for curry pumpkin soup

  • Depending on the variety, peel the pumpkin and cut it into wedges.

    You also remove the seeds and dice the columns into pieces approx. 2 cm in size.

  • Peel the onion and cut into rings.

  • Clean the leek, cut it lengthways and wash and then cut it into rings as well.

  • Wash the apple, cut it into wedges, removing the core.

  • Heat the oil in a large saucepan and sauté the onion and leek briefly.

    Sprinkle the sugar on top and let it brown lightly.

  • Now pour in the broth and stir in the apple and pumpkin.

    Season everything with salt, pepper and curry powder.

  • Cover and cook over medium heat for about 30 minutes, until the pumpkin and apple are soft.

  • Now roast the pumpkin seeds as you like in a pan without fat.

  • Stir the cream into the soup and puree everything with the hand blender until creamy.

  • Now you can season the soup again with salt and pepper and serve sprinkled with the pumpkin seeds.
