Recipe for puff pastries with spinach and feta: you need these ingredients
275 g chilled puff pastry, 1 roll
1 small onion
2 cloves of garlic
120 g frozen spinach
1 tbsp olive oil
80 g feta + some milk
pinch of salt
Pinch of pepper
1 egg yolk, size M
2 Table spoons of milk

How to prepare the puff pastries with spinach and feta
Preheat your oven to 190 degrees top / bottom heat.
Peel the onion and garlic cloves (this is a quick and easy tip) and finely chop both.
Heat olive oil in a pan and sauté the onions and garlic in it.
Then add the thawed and well-squeezed frozen spinach and cook for another five minutes.
Let the spinach cool and then squeeze out
the remaining liquid
again

Mash the
feta with a fork and a little milk
into a mass, which you then mix well with the spinach.
Season everything with sea salt and freshly ground pepper.
Cut the puff pastry roll into
eight equally sized squares
.
Beat the egg yolks with the milk and brush the edges of the puff pastry pieces with it.
Then put a tablespoon of the spinach and feta mixture in each corner of the square and fold it into a triangle.
Press the
edges well with your fingers or a fork

Brush all pockets with the remaining whisked egg yolks and bake the
puff pastry

on a baking sheet lined with baking paper for about 15 to 20 minutes - until they are golden yellow.
