Ingredients:


clean lamb shoulder weighing 2 kg


6 halved potatoes medium size


3 red peppers cut into quarters.


1 medium sweet potato

cut into

boats


3 coarsely chopped peeled carrots


3 celery sticks including coarsely chopped leaves


3 medium white onions

cut into

strips 1 cm


2 onions Purple cut into strips 1 cm


10 cloves garlic


2 tablespoons Dijon mustard


2 tablespoons honey


2 teaspoons coarse salt


1 tablespoon black pepper


1 tablespoon ambala or ambaba spice


½ glass of quality red wine.

How to prepare:



Preheat oven to 180 degrees.



First of all take a wide and deep mold that also goes into the home oven, put the shoulder inside the mold and with a knife punch holes in the shoulder and push the garlic between as deep as possible.

In a small bowl, take the mustard, honey, pepper and salt, and mix until smooth.

Then take the mixture and spread the shoulder evenly from all directions (massage and dissect for a few minutes). Then place around the shoulder the root vegetables and sprinkle over a little salt and pepper and pour the red wine.

Wrap the construction in foil and place in a preheated oven at a temperature of 180 degrees for two and a half hours.



Then remove the foil for another 15 minutes to brown.
