Covid: stop stocks, yeast will be on the shelves

This is said by the Lievito di Assitol Group, the Italian Association of the Oil Industry, which represents the companies in the sector with the persistence of the health emergency. This is said by the Lievito di Assitol Group, the Italian Association of the Oil Industry, which represents the companies in the sector with the persistence of the health emergency.

Yeast (Saccharomyces cerevisiae, hence the definition of brewer's yeast) is a microorganism that comes to life from a by-product of agricultural origin, sugar molasses.

It is an all natural process, in which companies have the task of creating and maintaining the most favorable conditions for this microorganism to reproduce in the presence of oxygen.

In short, the yeast is 'cultivated' and not made, the president is keen to specify, it has its times that must be supported and facilitated but that it is impossible to upset them.

In addition to the critical issues of the pandemic, the sector, denounces the Group, has to deal with the difficult finding of the raw material, sugar molasses.

In this sense, the proposal made by the European Commission in the context of the discussion on post-2020 renewable energy, to include molasses among the advanced biofuels, is of great concern, thus favoring its use to produce bioethanol, with the support of the incentives already provided by EU standards.
