60 vanilla croissants you will
need:
275g flour
70g sugar
1 packet of vanilla sugar
100g ground almonds (skinless)
1 pinch of salt
200g soft butter
2 egg yolks

The
dry ingredients together
and add then softened butter and egg yolks.
Knead everything well with a dough hook and then work again by hand until the ingredients are well combined.
Then wrap the dough in cling film and place
in the refrigerator for about 45 minutes

The cooling time can also be extended if you want to prepare the dough.

After the dough has chilled for a while, it's ready to be shaped into vanilla crescents.
To
do
this,
dust the work surface
with a little flour.
Divide the dough into
three equal parts
and shape each into a roll.
Take the first rolling pin and cut it into approximately
1.5 cm thick slices
.
Now roll this with the curved hand into a
crescent-shaped shape
and place it on a baking sheet.
Repeat this step with the other rolling pins while the first tray is baking in the oven.
