Let's start with the obvious - at 11:59 PM this coming Thursday, quite a few bottles of vodka that were put in there will come out of the frozen freezer of "Popular Coffee" in advance.
Avi Bitton, it can be assumed, will stop everything and enter his team.
He will say a few words - or not, because what really is left to say at the end of such a year - and at the end the most justified drink in the city will be swallowed.
A new year will begin, and it will start well.
But let's not get ahead of the latter.
The hours leading up to that long-awaited drink will be spent by the staff of the popular bar (did you see what we did there?) In the execution of what can only be defined as "Avi Bitton's Russian meal project."
A kind of Novi Good Shatnz that comes all the way home, or as we prefer to think of the event - the table that drowns the ethnic demon with lots of vodka and even more tempting food plates.

"We wanted to do something interesting and unique for New Year's Eve," Bitton told Walla!
NEWS, "And even before the closure, we realized that this year the whole party thing would be less talked about, so we went for 'The Cousin of New Year's Eve', something Eastern European, and in fact the most Israeli non-Israeli holiday there is."
The direction, according to Bitton, is a more limited celebration, in the arms of the family, with an emphasis on food and togetherness.
The "Popular Coffee" team is a member of the "Roski Standard" vodka brand, and the result is a perfect Novi Good meal, which will arrive at home in a delicious "OH MY NOVI GOD" package, with all the signs of the holiday.
It will include, among others, the Zakoski (small portions) section laden with brioche buns, oligarchs shrimp in sea fish bisque, garblax (recipe below), roast beef, foie gras feta and Moscow-Tel Aviv sashimi (tuna, fennel, citrus vinaigrette and beets), Mains such as short ribs, risotto and seafood or gnocchi, truffles, asparagus, desserts in the form of "mascarpone napoleon" and chocolate mousse, as well as games, decorations and a cocktail set for Mosque Mule properly, with standard platinum rusks, copper cups and a recipe of course.

"I'm crazy about Eastern European-Ashkenazi food, anything to do with salted fish and beets, for example, even though it's very far from how I look and from there my family," Bitton explained, "I've been to Eastern Europe a few times in the past and was fascinated."
And so, it was decided to make a kind of "amusement park of recipes", as he defined it, and take the classics in a more exciting direction.
"You can enjoy even without flights and without big things, and cling a little to the small things. I really hope we stay next year with the little good created because of the corona," expressed hope, "patience and tolerance, mutual guarantee between us, and the desire to help. The main thing is a better year."

1 kg of fresh salmon
6 tablespoons coarse salt
4 tablespoons brown sugar
Chopped bundle of dill
3 bay leaves crushed

Preparation
How to make Avi Bitton's Gravdelex?
In a bowl, mix together the salt, sugar, dill and bay leaves.
2 Transfer the salmon to a pan large enough for the whole fish to enter.
3 Cover the fish with a layer of the mixture, pat and tighten the shell.
Wrap in cling film and refrigerate for 24 hours.
5 Before serving, rinse the fish under a stream of cold water, dry well with absorbent paper, slice thinly, and serve.
