In the middle of the final, she tries a cake… with a tree!

Elodie Condemi won season 9 of the “Best Pastry Chef” competition thanks to her audacity this Wednesday evening on M 6. This energetic manager of a pizzeria in Mulhouse faced Margaux, the youngest participant, in the final duel.

The thirty-something with a laughing face stood out for her daring flavors and her whole temperament.

The one Mercotte describes as "pugnacious and creative" never gave up despite the unforeseen.

And it intends to continue its momentum.

Would you have thought you would win the first day?

ELODIE CONDEMI.

Not a single second!

I expected to leave in the first week.

I didn't think I was up to it and I was putting a lot of pressure on myself.

Then one, two, three weeks passed.

There was a click during the theme of the United States where I made the clowns.

From there, I started to make cakes that looked like me and it showed!

Why did you enter the contest?

I love baking since I learned to walk.

My parents are not in the restaurant business but we always liked it.

One evening when I got home from work, I applied on a whim.

I opened a pizzeria when I was 20 because my parents had a pizza oven in their garage.

Pastry was an annex.

With “The Best Pastry Chef” it became 50/50.

Your preparation bowl exploded in the middle of the final.

Did you panic?

I had put it in the microwave.

There must have been a thermal shock.

I said to myself: "It's the home straight and I'm going to waste a lot of time compared to the others".

I was taken aback then I pulled myself together and started all over again.

You seemed close to Margaux.

Were you happy to end up in a duel against her?

I admire his talent at his age.

From the first test, she impressed me with her dessert.

We live together seven days a week during the shoot so everything is intense.

We were hoping to finish this season together.

When I won, I felt bad because I wanted to share this victory with her.

You stood out for your search for flavors, like the fir buds in your cake on the finish.

Where does it come from?

From my travels!

I must have done 22 countries.

I often ate there in the street to test new tastes.

Since the pandemic, I have missed it.

For the final, it all started with a memory.

One day, I was walking by a pond with fir trees.

I had read that it was edible.

It came back to me during the show.

But I never knew if my mixes were going to work.

It was always a first.

Since it worked in my head, I thought it would in the cake (

On screen, we also discovered you very emotional ...

I have this character of laughing out loud and being angry or crying an hour later.

During the show, it was increased tenfold.

But that's my character and I feel good like that.

I participated with my heart.

How was the atmosphere behind the scenes?

I felt like I was in Australia ten years ago when there were ten per room in a hostel.

After the tests, we would meet at the hotel to unwind and sometimes we would all dance together.

What was the bet with your husband that you spoke about with the host Julia Vignali?

When I said: "I'll be home after a week"

,

he said: either a week or you win.

So I'm going to give him my book won with the final (

).

He's coming out in a few days.

I deliver recipes there with my vision of pastry.

I also have a few projects like launching a product line or workshops.

Would you like to participate in another show?

I found myself enjoying this universe more than I would have imagined so I won't be against it.

I've always dreamed of doing “Koh-Lanta” (

laughs

).

I am an adventurer at heart so I would be able to submit my application.

How do you cope with the closure of restaurants?

It becomes long and heavy.

I'm trying to see the bright side: I've never spent so much time with my daughter.

But it's my job and that's what I live on.

It's annoying to see that it lasts.

Normally, I sell a bit to take away but the curfew will be at 6 p.m. (

Editor's note: she lives in Alsace

).

Since this is my opening time, my pizzeria will be completely closed.

But hey… I'll make more pastries!
