Which meat do you use for meat fondue?
That's the

Meat fondue: how much meat do you expect per person?
The question of
how much meat you

per person
also depends on how many side dishes and vegetables you serve with it.
Basically, however, you can
expect

200 to 250 g of
meat
per person
.
Caution: Do not add too much meat (or vegetables) to the fondue at the same time, as the fat or oil will then cool down too much.
Take short breaks in between so that the fat can heat up again.
How much and which oil do you use for meat fondue?
The classic fat fondue is called
fondue bourguignonne
.
If you want to prepare your meat in oil or fat, you should note that it
can be
heated
to
at least 180 ° C.
Only then will all the ingredients be cooked and nicely crispy.
Therefore, for example,
rapeseed oil
or sunflower oil that
can be
heated to a high temperature are
suitable.
As a further plus point, these types of oil have a neutral taste.
But you can also use
coconut oil or clarified butter
.
Butter and cold-pressed oils, however, are not suitable!
Calculate about
1 liter of oil or 1 kg of fat
for a fondue with six people.
The size of the fondue pot is also important: the fat should not splash out, so fill the pot no more than halfway with oil.
You should heat the oil or fat on the stove beforehand so that it is then
ready for use
on the
rechaud (cooker)
.
Measure the temperature with a kitchen thermometer: it should reach 180 ° C.
After deep-frying in fat or oil, you should let the pieces of meat drain briefly, for example on kitchen paper, so that it is not too greasy.
Meat fondue with broth: the low-calorie alternative
If you want to save fat, a
meat fondue with broth is
the right choice.
Here you can use chicken, beef or vegetable broth, the choice is yours.
As with all recipes with broth, you can either make the broth of your choice yourself or use ready-made stock cubes, powder or bouillon.
Boil the broth in a saucepan on the stove before starting the fondue.
A
temperature of 95 ° C is
enough for a simmering broth.
Even with broth fondue, the fondue pot should not be too full so that nothing overflows.
If the broth is running out, you can add hot ones.
Count on
1 to 1.5 liters of
broth for a fondue with six people.
