Öko Test has now put toast under the microscope - with a sometimes terrifying result.
The

is one of the most popular
foods
on the breakfast table German households.
Experts examined the ingredients of twenty whole-grain toasts - the consumer
portal Öko-Test
* sounds the alarm
for two products
.
In addition to
mineral oil
that is
harmful to health
, a
carcinogenic substance has also been
discovered.

There are many different kinds of toppings and it quickly satisfies the feeling of hunger - but what exactly is in the bread that we eat so often?
Öko-Test got
to the bottom of this question and
evaluated
twenty products in the test
- some
impurities were
discovered in the process.
Whole grain, butter, rye or spelled: the selection of
toasted breads
on the supermarket shelf is extensive.
Whole grain bread in particular contains significantly more fiber than wheat bread and is therefore also healthier - at least that is to be assumed.
However,
impurities
and
pollutants
were found
in some
whole grain
varieties
and in
spelled toast
.
Toast put to the test: Öko-Test fails two organic products
The consumer portal Öko-Test provides information about eight
toasted breads
that
are contaminated
with
mineral oil
- including two organic products with high values.
For example, the Backhaus Bioland wholemeal toast received the grade "poor" and thus failed the
test
.
In addition to mineral oil,
aromatic mineral oil hydrocarbons
, which can even be carcinogenic, were found in the
Ammerländer organic wholemeal sandwich
.
As the
test
shows, not all organic products are necessarily convincing and healthy.
But how does
mineral oil get
into bread and how dangerous is it actually?
The provider “Das Backhaus” informed the consumer portal that the mineral oil components (abbreviated to MOSH) got into the wholemeal toast through technical white oils, as this is
used
as a
lubricating grease
during production
.

According to its own information, the manufacturer has corrected this error since mid-November 2020, so that the toasted bread with the best before date from December 21, 2020 will not show any further
contamination
.
The company "Stöhr-Brot", manufacturer of the Ammerländer organic wholemeal sandwich, had no answer to the contamination, but promised to investigate the cause.
Mineral oils
are particularly harmful to health as they accumulate in organs and
cause
inflammation
there.
In addition, an increased
risk of cancer
cannot be ruled out.
Therefore the content in food should be as low as possible.
Öko-Test selects test winners: These toast products were convincing
In addition to the two mentioned test losers, there are also some
toasted
breads that have convinced: Eight breads
even achieved the top grade
in the
test
- it is noticeable that only one organic product is included.

Toast test: Carcinogenic substance increased in two breads
In addition to
mineral oil
components, other ingredients were also discovered, such as
acrylamide
.
When toasted golden-brown, the toast breads from Rewe and Penny in particular had comparatively high acrylamide values.
The chemical is a
carcinogenic substance
that forms when the bread is toasted.
The following applies: the darker the toast slice, the more acrylamide is created.
Therefore, one should not eat charred bread, because even if you scrape off the dark layer, the pollutant will not be removed.
With regard to the degree of roasting, consumers have control over how healthy it is to consume.

Storage:
Since
toast is
very susceptible to mold, it is best to
store
the bread in a
box
after opening
- this will keep it fresh the longest.
Like other bread, it dries out quickly and loses its flavor in the refrigerator.
However, toast can be frozen without any problems and even toasted when it is frozen.
To avoid freezer burn,
smaller portions
should be
frozen airtight in freezer bags.
Consumption:
If one slice in the package is already
visibly moldy
, the others are no longer suitable for consumption either.
As already mentioned,
charred bread
should
no longer be eaten due to carcinogenic pollutants.
Too much salt in the toast?
Öko-Test warns of possible health risks
The consumer portal also expressly points out a
health risk
due to salt
: Consistently high salt consumption can
trigger
high
blood pressure
and thus increase the risk of a
stroke
.
The German Nutrition Society (DGE) therefore recommends that adults do not consume more than six grams of salt per day.

The carcinogenic substance acrylamide can develop in a toast even if it is only slightly roasted.
Consumers should therefore make sure that the slice is not roasted too dark when consuming it.

Bread and sausage products as well as cheese are among the largest sources of salt intake in Germany.
However, Öko-Test
can give the all-clear: Most of the
toasted breads
that were tested for their salt content contained adequate values.
Only two products, the Herzberger Bio 100% Whole Grain Toast Bread and the Ammerländer Bio Whole Grain Sandwich, had an increased salt content.

smell

mouthfeel
when the toast was eaten was also examined carefully
by trained sensory
experts in the extensive
test
: All products had a typical aroma and were more or less crispy and fluffy.
With regard to these criteria, every product, regardless of whether it was organic, no-name or brand, was rated “very good”.
The Öko Test experts also took a close look at oat flakes this year - with a terrifying result: pollutants were discovered in some oat flakes *.
