ROASTED BEET AND GARLIC CREAM WITH EGG

It's worth turning on the oven to get this cream, with all the flavor of caramelized beets and roasted garlic.

The addition of soft-boiled egg can make it a unique dish perfect for dinner.

SALMON AND AVOCADO TARTAR

For this tartar, fresh and smoked salmon are used, and they are mixed with avocado, which is in season.

This recipe that is prepared in Poland, the Czech Republic or Hungary under different names is a tasty example of it.

The key to the dish is to toast the leeks in the oven to give it a smoky touch.

WHITE CABBAGE GRATEN AND BLUE CHEESE

At El Comidista we like cabbages a lot, and prepared with creamy dairy-based sauces and cheese, they are so great that any schoolboy would be delighted to eat them, no matter how much phobia they have.

QUARK BALLS (QUARKBÄLLCHEN)

A fried sweet but not heavy with a dough based on cheese and flour, served hot like a donut and is perfect both to escape the German cold and to accompany a hot chocolate.

CABBAGE SALAD WITH CARROT

Two types of cabbage, carrot and a creamy dressing with a point of acidity are the key to the success of this salad.

It is best with a while of rest so that the cabbage loses a little firmness and the raisins are hydrated.

BESUGO WITH BUTTER AND LEMON

The French technique called "meunière" emulsifies butter with lemon juice, and is perfect to accompany fish such as sea bream.

A few seasonal vegetables round out the plate.
