It's hard not to admire, time and time again, the work of the fortune - winning winemaker Doron at Sphera Winery.



Before establishing, together with his wife Sima, her book, a fortune gained vast experience as an employee winemaker at the Ella Valley Winery.

Her book was established by Rabbi Hunim, in Moshav Givat Yeshayahu in the Ella Valley, as a vision.

This is a winery that produces only white wines.

In a country accustomed to drinking mostly reds (and if possible please have Cabernet Sauvignon and Merlot), this seems at first almost like a hallucination.

But her book project was successful, and how.

Quite a few Israelis have learned, mainly through sipping in restaurants, about the great range of qualities of white wines at their best, through Sifra wines.



Since the first vintage in 2012, the book has produced five wines each year - three varieties and two blends - all dry, in two series: White Concepts and White Signature.

The current vintage includes Sauvignon Blanc, Chardonnay and Riesling varieties and blends including completely different varieties: Chenin Blanc, Semillon and Roseanne.

The work of a multi-capitalist is always characterized by a particularly high degree of restraint in working with wood.

With vines growing in the Ella Valley a fortune manages to create the varietal wines that are probably as close as possible to classic French wines from Alsace, Burgundy and the Loire.

The Chardonnay, Sauvignon and Riesling are really great.

In blends, the semion takes up more space this year, alongside the second blanc.

'White Signature 2019', the tallest of which is a truly great wine.



The hail and rain are very far from us for the time being, but Sifra wines can and should color experienced drinkers this winter, which is still ahead of us, in white.

blend of white varieties that have a representation of the Loire Valley (Chenin Blanc), the Rhone Valley (Roussanne) and Bordeaux (Semillon).

Fruit and spices are very noticeable, a lot of presence to the rosé that gives a Mediterranean touch.

Despite being more extroverted relative to other vintage wines, and despite the clear (even if measured) presence of wood, it is a wine that maintains the stylistic restraint that characterizes Doron’s work of fortune.

It may be that for less experienced sipers, accustomed to exaggerated local white fruit, it may be the wine with which it is worthwhile to begin to learn the quiet charm of digit wines.
