You need these ingredients for the homemade "chicken nuggets"
Ingredients for 2 servings
For the nuggets:
125 g tofu or seitan
200 g canned chickpeas (plus chickpea water, called aquafaba)
1/2 vegetable stock cube
1/2 teaspoon mustard
Garlic powder
1.5 tbsp yeast flakes
50 g flour
salt and pepper
For the crispy breading:
150 grams of flour
100 ml unsweetened plant-based drink (e.g. oat milk)
salt and pepper
Tabasco
40 g corn flakes
30 g roasted peanuts
Frying fat (alternatively rapeseed or sunflower oil)

How to make the “Chicken Nuggets” yourself: vegan recipe
If you are using tofu: First squeeze the water out of the tofu block.
Cut the
tofu
or
seitan
into small pieces
and
put it
in a blender
along with the drained
chickpeas
, 50 ml of the
aquafabas
,
vegetable
stock
,
mustard
,
garlic powder
and
yeast flakes
.
Mix everything until you have a creamy mass.
Add the
flour
and mix everything again briefly until it has combined.
Season the mixture with
salt

pepper
.
Prepare three plates for the breading line: Put the
flour in one of them
up to about 3 tbsp.
Mix the
plant-based
drink
with 1.5
tablespoons of
flour,

pepper

in a deep plate

Coarsely chop
the
cornflakes
and
peanuts
in the blitz chopper and mix both in a third plate.
Now it's time to bread crumbs: Form small nuggets from the seitan or tofu mixture.
Roll these one after the other in the flour plate and knock off the excess flour.
