Always in the kitchen.

Baron, past and present (Photo: PR, Roni Baron)

Like quite a few people in Israel and around the world (well, like everyone else), Roni Baron thought she knew what was going to happen to her in 2020.

Like quite a few people in Israel (and at any other point on the globe, in fact) these thoughts evaporated into the open air and kept a social distance from reality.

In her case, however, we dare say that change is going to pay off for all of us.

was simple, basic and unpretentious - confectionery studies at the Danon Culinary School, and from there, if everything meets expectations, perhaps a modest integration in the Israeli sweet market.

You know, small, hopeful plans for a 21-year-old.

What has happened since then is not going to bring you down, will not drop your jaw and will not be the basis for clever click-byte headlines.

What has happened since then, however, may bring a small smile of optimism to your face.

These days it's quite a bit.

Baron worked as a barista at a cafe in the Modiin area and wanted a little more than that.

"What's nice about it is that it works a lot with small vendors, and it made me think maybe I could contribute too," she told Walla!

NEWS, "I wanted to come up with a good idea, something they need, something special and diverse."

Eventually, the thoughts brought Baron home.

"My sister is vegan and I wanted to put in something worthwhile, not 'nice for a vegan', but really tasty, with no discounts. I had an idea in my head for a long time, and this was the opportunity to try it."

The delicious-that-doesn't-need-your-vegan-discounts turned out to be brown peanut butter cookies, crispy to the touch but not crumbling, tender in the first second of the first bite and very, very far from the slightly negative vegan pastry image.

In short, an instant hit that continues to be snatched from the little cafe even in these weird to-go days.

"Mom would always make me boxes to take to friends or bring and distribute at school. Now those boxes just go further."

The virus that paralyzed the country closed the cafe and forcibly evicted LeBron for a lot of free time.

"The combination of freedom and inaction," as she puts it, along with inspiration from her perpetually baking mother, brought her back into the kitchen, eventually giving birth to "Bruni's," a bakery-confectionery whose home-made expression was tailor-made.

"For a long time I wanted to turn this love into something professional," Baron said. "There was a bit of fear, and quite a bit of apprehension - love will not love, will buy will not buy, but we decided to go for it."

This "we decided" is basically a whole family in the back that provides financial, marketing, managerial and mental tips, and also a mother who has always baked and is happy to help.

"She inspires me a lot. Some of the products in general are based on her recipes and things she passed on to me. She would always make me boxes to take to friends or bring and share at school. Now those boxes just go further."

If not now, then when exactly will you have time?

So what exactly is being eaten here?

Baron offers a tight but not too tight menu of temptations.

It starts with ceramic and spoiled creations such as Alphaphores cake, Lotus cake and Kinder Bueno cake, continues with the same boxes of cookies (roses just like before, for example, fragrant butter and cinnamon or vegan vanilla cookies), and ends (roughly) with quite a few more special things, the special Stops getting better.

There is an almond and honey pie with coconut, and a spectacular pistachio pie with white chocolate with a very crunchy dough and content that for us can also star in items about "the things we would like to shower in".

There’s lemon meringue pie (the most popular, according to Baron, and a look at it can explain that) and Nutella pie.

And there are also the "balls", a kind of more advanced, more sophisticated and dare to say also tastier version, of the homemade chocolate balls we are all familiar with.

Here they come in an Oreo version coated in white chocolate, in a glazed lotus version on top (because why not, actually?) And in a soft and deep Nutella version.

A brief conversation with Baron makes it clear that her original plans may have had a plot twist sponsored by Corona, but their essence has not changed.

Whenever possible, she will begin to learn the secrets of the profession in a more professional and institutionalized way, "to get more tools and develop in this field, to open her head to new things," as she defines it.

Later, she believes, "Studies will show me the way. I will study, adjust and understand exactly where I am going."

Until then, she enjoys and rejoices in the jump into the water, and her mother is pleased that "I have found myself and what interests me, that I have direction and that I am providing her with company in the kitchen."

You, in our opinion, can be satisfied with the opportunity to taste some worthy reality-sweetener, and tell a few more years that "you ate with her while she was making cookies at Mom's house."
