How to make eggplant toast (Melanzana a la Parmesan)?

  • 1 Peel the eggplant peel with a peel like a zebra (yes stripe, no stripe) and slice into 1 cm thick slices.

  • 2 Put the cup of flour in a deep plate and in another deep plate mix the eggs with salt, black pepper, parmesan and basil.

  • Heat a pan with oil 5 cm high. Dip the eggplant slices first in the flour and then in the egg mixture and fry in oil until nicely browned on both sides. Remove to a tray lined with absorbent paper (be careful not to place fried slices on top of each other).

  • 4 When all the eggplant slices are fried, place half the amount on a baking sheet, place a slice of yellow cheese and a slice of mozzarella on top of each slice (cut the cheese slices and adjust to the size of the eggplant) and if you want a basil leaf.

    Close them like toast with extra eggplant frosting on top.

  • 5 In an oven preheated to 170 degrees, place the pan with the "toasts" for 10 minutes.

  • 6 Meanwhile, in a small pot, mix and cook all the sauce ingredients together until the flavors are completely combined and the liquids are reduced, about 10-15 minutes.

  • 7 Pour into a plate or serving dish from the tomato sauce and place the eggplant toast on top.
