In this dish, match each of the two slices of fried eggplant with mozzarella cheese.
Bake in the oven until the cheese has melted and stretched and serve with tomato and basil sauce.
We at home call it eggplant toast, if you will from Lanzana a la Parmesan Style.
What is certain is that this is a winter treat to curl up with in the evening under the blanket and maybe even pick up a glass of wine for a love life next to it.

Ingredients

2 beautiful, shiny and hard eggplants
1 cup flour
2 eggs
Salt

4 tablespoons grated parmesan
4 tablespoons chopped basil
100 grams of sliced yellow cheese
100 grams of sliced mozzarella

For the sauce:
1 can of crushed tomatoes
1 clove crushed garlic
2 tablespoons olive oil

How to make eggplant toast (Melanzana a la Parmesan)?
1 Peel the eggplant peel with a peel like a zebra (yes stripe, no stripe) and slice into 1 cm thick slices.
2 Put the cup of flour in a deep plate and in another deep plate mix the eggs with salt, black pepper, parmesan and basil.
Heat a pan with oil 5 cm high. Dip the eggplant slices first in the flour and then in the egg mixture and fry in oil until nicely browned on both sides. Remove to a tray lined with absorbent paper (be careful not to place fried slices on top of each other).
4 When all the eggplant slices are fried, place half the amount on a baking sheet, place a slice of yellow cheese and a slice of mozzarella on top of each slice (cut the cheese slices and adjust to the size of the eggplant) and if you want a basil leaf.
Close them like toast with extra eggplant frosting on top.
5 In an oven preheated to 170 degrees, place the pan with the "toasts" for 10 minutes.
6 Meanwhile, in a small pot, mix and cook all the sauce ingredients together until the flavors are completely combined and the liquids are reduced, about 10-15 minutes.
7 Pour into a plate or serving dish from the tomato sauce and place the eggplant toast on top.
