ROME - The "Cavour" menu is born after the reopening for lunch on February 5th of Marc Lanteri's "Ristorante al Castello". The proposal of the restaurant in the province of Cuneo within the walls of the Grinzane Cavour castle is a dedication to the symbolic character of the restaurant that the French chef Lanteri, born in Tenda on the border between the Italian region of Piedmont and the French region of Provence-Alpes-Côte d'Azur, realizes with an ad hoc breakfast. The initiative was born with the celebration of the 160th anniversary of the unification of Italy and the death of Camillo Benso both in 1861, the first in March and the second in June. In presenting the menu it is recalled that Count Benso di Cavour, in addition to his role as statesman, had a "fundamental role in the administration of the village of Grinzane Cavour" where he lived for over a decade, from 1832 to 1849. Among the dishes and ingredients most loved by Count Camillo Benso reinterpreted by chef Lanteri are Cardi Gobbi di Nizza Monferrato, potatoes from the Langhe, organic egg yolk in breadsticks crust and black truffle, Agnolotti stuffed with broccoli, Raschera di Frabosa fondue and Speck "Luiset" and veal cheek braised in Barolo with ancient corn flour polenta. Cavour's breakfast includes a choice of three out of four dishes during the week and a full menu at the weekend.
