English recipe: how to bake scones yourself

  • Preheat the oven to 220 ° C top / bottom heat (200 ° C convection).

  • Mix the flour, baking powder, and salt in a bowl.

    Add the butter and rub everything with the palms of your hands until the mixture looks crumbly.

    Then stir in the powdered sugar.

  • Heat the milk in the microwave for about 30 seconds until it is warm but not hot.

    Add the vanilla extract and lemon juice.

  • Slide a baking sheet with parchment paper in the oven.

    Make a well in the flour mixture and pour in the liquid ingredients.

    Mix everything quickly, but not too much.

  • Sprinkle some flour on the work surface and tip the dough on top.

    Sprinkle a little more flour on the dough and your hands and fold the dough two or three times until it's a little smoother.

    Don't knead too much!

  • Roll out the dough about 4 cm thick.

    Take a round cookie cutter (about 5 cm), dip it in some flour and cut out four scones.

  • Knead the remaining dough again, roll it out and cut out four more scones.

  • Brush the top of the scones with a beaten egg and carefully place the scones on the hot baking sheet.

  • Bake the scones for 10 minutes until they are risen and golden brown.

    Recipe for 200-250 g clotted cream:

  • Pour hot water into the larger form so that the smaller form is 2–3 cm high in the water.

    Put the molds in the oven and switch it to 70 ° C top / bottom heat.

  • Now let the cream warm up gently in the oven for about 8 hours: a thin skin will form on the cream - do not stir under any circumstances!

    Then carefully lift out the mold with the cream and put it in the refrigerator overnight.

  • The next day carefully skim off the upper, solid layer and transfer it to a clean container with a lid.
