Chocolate cakes with cream is my Guilty Pleasure.
They do not have to be sophisticated, but they do have to be good - the cake is soft and juicy and the chocolate cream is high quality.
After quite a few tries, this is my favorite version.
True, there is quite a bit of cream and chocolate here, but note that an insanely high cake comes out that is enough for quite a few celebrants.

Ingredients
For chocolate cake:
¼2 cups flour (315 g)

How to make a chocolate layer cake from the dreams?

Start preparing the cream for the filling:
Melt the dark chocolate together with 375 ml of sweet cream (a container and a half) in a bun or in a microwave in pulses. Mix to obtain a smooth cream, transfer to a bowl and refrigerate for at least 4 hours.

make the cake:
Preheat the oven to 170 degrees.
Line the bottom of the pan with baking paper and raise the edges with additional strips of baking paper.
Sift the flour, cocoa, baking soda and baking powder into a large bowl.
Stir in the sugar and salt.
4 In another bowl, mix the sour cream, oil and eggs.
5 Combine the bowls and stir well until a uniform mixture is obtained.
Add in the hot coffee or boiling water and stir until completely incorporated into the mixture.
6 Pour the batter into the pan we prepared and bake for about 40 minutes, or until a toothpick inserted in the center of the cake comes out dry with moist crumbs.
Cool the cake completely.
7 The cake will have a relatively high dome and that's fine.
Using a long knife (preferably a bread knife) straighten the top of the cake.
Slice the cake into three equal slices and set aside.
8 In a mixer bowl with the whipping balloon, beat the cold chocolate cream for about half a minute on low speed.
It is still stable and difficult at this point.
Add the rest of the cream (a container and a quarter) and continue to whisk on low speed.
Once the cream is uniform, increase to medium-high speed, and beat until a stable cream is obtained.
Beware of over-whipping.

Ingredients:
Place a slice of cake directly on the serving plate and spread cream on it (about one-fifth of the amount of cream).
Continue like this with the other two layers and coat the cake with the remaining cream from all directions.
Transfer the cake to the refrigerator.
10 If you want to watch the ganache, melt the chocolate and cream in a microwave or a Ben Marie and cool them to room temperature.

Tips for Creating the Perfect Layered Cakes:

It is important to work with her quickly.
3. You can also bake the cake in a 24 cm diameter mold. In this case, cut the cake into 2 slices.
4. If you are afraid of icing the cake, you can apply cream only between the layers, and give up the side icing.
