"Top chef", episode 6, season 12: tough guys, these candidates

When the two-star chef Pascal Barbot invites the contenders for the title of Top Chef 2021 to wow him with a grain of rice, we hear a nervous laughter from the nine candidates still in the running.

In turn, candidates must invent an instant cooking method, other than salt, to cook seafood without fire or oven.

A challenge as grandiose as it is unprecedented.

Baptiste, a little prodigy by Paul Pairet, uses scallops wrapped in duck fat and Calvados, cooked on a Parisian pavement.

His bet?

That in contact with the hot granite, “it flames”.

When it comes to impressing chef León, Baptiste stammers, visibly stressed.

The suspense is at the limit of the bearable, when, suddenly, the fire takes.

The bar is high.

Prawns cooked by thermal shock

Thomas, “the quiet strength” of Michel Sarran, imagines a thermal shock.

Its bed of coarse salt heated to 300 ° C and very full-bodied broth at 3 ° C should offer just cooked prawns and perfectly flavored.

In the same brigade, Arnaud, "the troublemaker of the season" is inspired by a documentary to cook his scallops in lava stone.

Mohamed, rather at ease in the exercise of the culinary spectacle, evokes his native Algeria with a terracotta stone heated on embers, serving as a bed for a Scottish salmon flambéed with sake.

The hour of the verdict comes.

Sarah and Pauline run away at the last chance.
