Ingredients for a springform pan (26 cm)

For the shortcrust pastry:

  • 450 g flour

  • 300 g soft butter

  • 120 g of sugar

  • 1 pinch of salt

  • Butter and flaked almonds for the pan

For the filling:

  • 8 tart apples (e.g. Gravensteiner or Cox Orange)

  • 3 tbsp lemon juice

  • cinnamon

Recipe: How to bake a covered apple pie like grandma did

  • Knead the flour, butter, sugar and salt with the dough hook on the hand mixer to form a smooth dough.

    Wrap it in cling film and put it in the refrigerator for about 30 minutes.

  • In the meantime, peel, quarter, core and grate the apples.

    Mix them in a bowl with the lemon juice.

    Season to taste with cinnamon and mix in the raisins (if you use them).

  • Preheat the oven to 180 ° C top / bottom heat.

    Grease the springform pan with butter and sprinkle the bottom with the almond flakes.

  • Roll out half of the dough between two layers of parchment paper, slightly larger than the springform pan.

    Place the dough in the mold and pull it up a little at the edge.

  • Spread the apple mixture on the dough and smooth it out.

    Roll out the remaining springform-sized dough and place it on the apples as a lid.

  • Bake the apple pie in the middle of the oven for 45 minutes.

  • Then take the cake out, let it cool and dust it with powdered sugar if you like.
