For several days, the chef of the Maison des Têtes restaurant in Colmar (Haut-Rhin) has been anticipating the recovery by experimenting with a “zero covid” system.
This investment of 12,000 euros allows it to be the first restaurateur in France to test innovative technologies against Covid-19.
The "pearl" of the device is this decontaminating UV lamp manufactured by the Alsatian company Concept Light.

“We have created a sanitary corridor between the kitchen and the room so that the teams do not cross paths.
Once the plates are prepared, they are placed on a trolley which spends four seconds under the UV lamp to be decontaminated without altering the taste of the food, ”explains the chef, who has been awarded a Michelin star.

A restaurateur who has also reorganized the room at the Maison des Têtes by installing Plexiglas windows between each customer at the table or self-decontaminating adhesives on the door handles.
"With this device, the idea is that the return to restaurants will be done in serenity, because it is certain that when the government gives the green light, we will be bombarded with reservations," said Eric Girardin.
Pending this authorization, the government is closely scrutinizing the device tested by the Colmar establishment since a file has been submitted by the Concept Light company to the Ministry of Health, in order to obtain a rapid opening.
