Such is the following recipe - almond cake, served with soft whipped cream and a quick sauce made from fresh strawberries.
Apart from obtaining a particularly impressive and delicious dessert, it is also quite simple to prepare.

Ingredients
For almond cake:
¾ Cup sugar (150 g)
5 proteins (L-sized eggs)
3 egg yolks (eggs in size L)
100 g melted butter (lukewarm)
1 teaspoon vanilla extract
2 cups ground almonds (200 g)
1 teaspoon baking powder
½ teaspoon of salt
3 teaspoons cornflour (30 g)
¼ Almond chips
For the syrup:
¼ Cup sugar (50 g)
Buckwheat (50 ml)
3 tablespoons orange juice (45 ml)
For strawberry coulis:
½1 cups chopped strawberries into small cubes (215 g)
3 tablespoons fresh lemon juice (45 ml)
2 tablespoons of sugar
10 mint leaves
For whipped cream:
250 ml for 38% sweet cream
2 tablespoons powdered sugar

How to make an almond cake with whipped cream and strawberry sauce?

Prepare the syrup:
Cook the sugar, water and juice in a small pot until the sugar dissolves.
Bring the syrup to a boil and cook for another 2 minutes.
Cool to room temperature.
2 Preheat oven to 170 degrees.
Line a 24 cm diameter pan with baking paper and grease the sides with butter.

Prepare the cake:
In a clean mixer bowl, beat the egg whites and sugar until a firm but soft foam is obtained.
4 In a separate bowl, mix the egg yolks, vanilla and lukewarm butter.
Add a third of the amount of foam to the bowl with the butter and fold with a spatula until it is absorbed.
Add the rest of the foam and fold gently until a uniform mixture is obtained.
5 Add the ground almonds, salt and baking powder, sift in the cornflour and fold until incorporated.
6 Transfer the batter to a pan, sprinkle with the almond chips and bake the cake for about 25-35 minutes, until it is golden and a toothpick stuck in it comes out moist with a few crumbs.
Cool and brush the cake with syrup.

Prepare strawberry coli:
Grind all the sauce ingredients in a blender or small food processor, filter and keep in the refrigerator until assembled.

Prepare whipped cream:
Place cream and powdered sugar in a mixer bowl and beat just until a slightly stable, but still soft whipped cream is formed.

Serve:
Slice the cake and place a tablespoon of the whipped cream and a few tablespoons of the strawberry sauce on top of each slice.
