At Greco Aquarius, the deli of Greco Restaurant, add a Greek-Mediterranean touch to the traditional fish patties and a velvety, lemony orange sauce that bounces the dish several levels above.
It’s time to get into the kitchen, loosen up a bit and start adding new colors and flavors to the tradition.

Preparation
How to make Greek style gefilte fish?
1
Prepare the Gefilte Fish Patties: In
a food processor, grind all the ingredients except the dill until smooth.
If it is still granular, add a third cup of cold water and grind until the desired texture is obtained.
2 Transfer the mixture to a bowl, add the chopped dill, mix and adjust seasoning as needed.
3 Prepare fish patties (about 80 grams per unit) and place in a wide and semi-deep pan with baking paper.
Pour a glass of cold water into the pan, and bake uncovered in an oven preheated to 160 degrees for about 20 minutes.
Remove and refrigerate.
4
Prepare the sauce:
Put all the sauce ingredients in a pot and cook over a low heat until boiling point, constantly whisking with a whisk, until a thick and smooth sauce is obtained.
Taste and adjust seasoning as needed.
Transfer the patties to a flat serving dish and pour over the sauce, garnish with fresh dill leaves and you can also touch horseradish.
Tip
5
:
Note that the orange sauce has eggs.
In order to obtain a thick and creamy texture, be sure to put the ingredients in the pot when they are cold, cook over a low flame and beat well until boiling and certification.
The operation can also be performed over Ban Marie.
