Lemon tart recipe: you need these ingredients
Ingredients for a springform pan or tart pan (26 cm diameter)
Preparation time: around 25 minutes
Baking time: around 45 minutes
For the shortcrust pastry:
200 g soft butter and a little more for the pan
80 g of sugar
1 pinch of salt
1 egg
200 g of flour
For the cream:
4 eggs
150 grams of sugar
150 ml lemon juice (from approx. 3-4 lemons)
200 g sour cream
Organic lemon wedges for garnish (if you like)

How to bake the lemon tart: easy recipe for tarte au citron
Preheat the oven to 180 ° C top / bottom heat and grease the baking pan with butter.
For the shortcrust pastry:
Knead the softened butter with the sugar, salt, egg and flour first with the dough hook of the hand mixer, then with your hands to form a smooth dough.
Press the dough into the baking pan with your palms, forming a small rim.
For the cream:
whisk the eggs with the sugar.
Briefly stir in the lemon juice and sour cream.
Pour the cream on the dough.
Bake the tart in the oven on the middle rack for about 45 minutes.
Make sure that the surface does not get dark.
If necessary, cover them with aluminum foil.
Then take the tart out of the oven and garnish with quartered or whole lemon wedges.

Tips for the lemon tart fresh from the summer
The
lemon slices
for the garnish shine nicely if you boil some water with 2 tablespoons of sugar and dip the lemon slices in it before placing them on the tart.
Caution: Make sure you use a fork for this, the sugar water gets very hot!
The tart looks even more festive if you sprinkle dabs of cream all around and sprinkle some grated organic lemon peel or chopped pistachios over it.
