We'll tell you why.

There is starch in pasta.

This starch is released into the water when the pasta is cooked, so that the pasta water takes on a cloudy color.

: If you accidentally pour your pasta water down the drain for routine reasons, we recommend other tricks to

thicken sauces

: For example, the

water from black beans

in a can

makes

your sauce wonderfully creamy.

But it is best to

always use a ladle to

scoop off

some

pasta

water once or twice

before

draining the pasta

and pour it into a bowl or cup.

You can then pour the pasta into the strainer over the drain as usual.
