1 teaspoon salt

Preparation
How do you prepare a Moroccan escapee for financing?
1 Mix flour and salt.
Add the water gradually and put about 4 minutes on for a uniform and very soft dough - but not sticky.
2 Form the dough into balls the size of a ping-pong ball, dip each ball in a bowl with oil and place in a pan.
Leave to rest for half an hour at room temperature.
3 Heat a skillet over medium heat.
Open each ball out by hand with gentle smearing motions on a greased surface until the dough is stretched into a thin, even circle.
Place a circle of muffleta on the pan (no need to grease it before).
When it turns golden turn to the other side.
Immediately place another circle of battered dough on it, wait half a minute and turn the two together so that the new dough circle is facing down.
Repeat the operation and stack the prepared escapes on the side, preferably in a plate covered with a towel.
4 Serve with butter to spread and the R-B-H honey.
