After its apple juice, the association of Eure Les 3 épagnoles transforms the pulp into powder of dehydrated apple pomace.

It has been four years since Marie-Paule Leblanc, a young retiree and incidentally, mayor of the town of Épaignes (Eure), founded the association Les 3 apples Épagnoles in reference to the city's coat of arms.

Initially, its action focused on the protection of the Normandy countryside and in particular its orchards.

With the message "your garden, your apples, your juice", the volunteer has thus motivated in four years nearly 400 members to come and transform their apples into 72,000 liters of juice: "It's a great success, especially for the link social.

We were able to build at the Pinchon communal farm, two laboratories and a press with its crusher.

Pasteurized, apple juice is packaged in pouches or bottles ”.

A new local product

But Marie-Paule could not stop there!

Already, the association's statutes are being amended to transform it into a cooperative society.

"It is about working with our beehives and also offering the services of our equipment to partners such as brewers, farmers or even individuals".

The young retiree also reflected on the use of apple pulp after pressing: “I was bothering to throw it away!

After some research, I decided on immediate dehydration.

Do not give it time to oxidize.

Following various grinding tests, we succeeded in obtaining a powder of dehydrated apple pomace, a new local product, Fari'pomme.

The Normandy region and Ademe (

Editor's note: the Ecological Transition Agency

), as part of the program on the recovery of organic waste, have agreed to finance the installation at 50% ".

Next step, marketing

In sachet, the powder as fine as flour “has a lot of quality.

It is rich in fiber, with natural sugar, a caramelized aroma and holds better than gluten-free flours.

It replaces or mixes easily with other flours in cakes, cookies or sweet or savory recipes with Norman flavors ”, argues the elected.

Numerous tests have been carried out with restaurateurs and bakers.

The analysis phase is over.

The choice of the best packaging now remains: “With or without a valve to preserve the aromas?

During the next harvest, we will transform three tonnes of pulp and move on to marketing through our members, specialized stores and artisans to integrate it into their productions.

I would also like to approach the tourist offices.

This is my territorial approach!

My DNA!
