"Attentive to diners."

"Our menu was built for seven years according to the customers and their choices, we are attentive to our diners and from a place that started only with Mexican style tortillas we evolved into a rich and varied menu. There is a lot of diners in the Cruncho area because we are located in the center of Ashkelon. And we learned a lot while on the go, "says Shlomi Hugi, a partner and chef of Crancho who is in charge of the culinary aspect.



So Shlomi and the partners in Crancho learned the local palate in a daily meeting with the diners.

The dishes were developed by Shlomi according to the audience's reactions and were precise.

Today he is proud of several flagship dishes that have become very popular on the menu, with his main pride being the secret recipe of the burgers he has developed.

"Many chefs are driven by ego, the chef sets the menu and here it's all over.

"I've been working on the burgers for the last year and a half, fixing and changing and there was a time when everyone I knew ate a hamburger for months because I improved the recipe more and more until I got a balanced, juicy and precise taste," says Shlomi. "Our burgers are gaining more and more momentum."



Cruncho's hamburger: 250 g of a fine beef mixture according to a secret recipe, served on a sweetened sesame bun with lettuce, tomato, pickle and purple onion (NIS 41).

The burgers are available with a variety of toppings on top like onion jam that Shlomi makes or smoked goose breast, with Shlomi proud that everything is and the staff prepares instead from scratch and that nothing is bought.

"All the raw materials, sauces, spreads and toppings are made by hand every day. The salads, pickles, antipasti, meats are freshly ground in the restaurant's kitchen. I even grind the smoothie with my own hands," says Shlomi. "We work with the best suppliers in their field. "And there is no compromise in the raw materials. Freshness and quality are above all with us, and customers come again and again as a result."

What's the next project?



"I'm working on a bun with disassembled and juicy asado and there are a few more surprising dishes on the way," says Shlomi.



Shlomi says that the place is especially popular with young people and families.

"Five or six people come and everyone finds a favorite dish. One will have a stir-fry with entrecote (Thai stir-fried cruncho with entrecote, NIS 49), another schnitzel with tortilla (NIS 32), the third a hamburger, a fourth shawarma and a burgul on a plate (NIS 48) and the fifth Juicy lamb kebab, and if it's a family or guys they really like our little hamburger deal, it's a celebration, "says Shlomi.

How did you cope during the Corona period?



"We only switched to deliveries and strengthened dishes that stand the test of delivery," says Shlomi, "we had to rediscover ourselves and all of us, including the owner who each comes from a different ability and specialization, went back to the meaning of working with hands and worked hard to retain customers. "The changes in the guidelines, but now we hope that everything is behind us. We are open again, we get an audience to sit according to the guidelines and we are satisfied that we are in a prime location in terms of traffic in the city. We continue to be true to the concept."
