1 egg yolk

2 spring onions
200 g bacon cubes
1 tbsp vegetable oil
4 eggs (size M)
200 g cream
200 ml of milk

1 pinch of grated nutmeg

How to prepare the “Alsatian style” leek quiche with bacon
For the dough
, put the flour, the butter in cubes, the egg yolks, 3-4 tablespoons of cold water and the salt in a bowl.
Knead all the ingredients quickly to form a dough.
Then shape a ball out of the dough, wrap it in cling film and let it rest in the refrigerator for 30 minutes.
For the filling,
wash and cut the spring onions into fine rings.
Heat the oil in a large pan and fry the spring onions and bacon in it over medium heat while stirring for about 5 minutes.
Set the leek and bacon mixture aside.
Preheat the oven to 200 ° C top / bottom heat or 180 ° C fan oven and line the springform pan with baking paper.
Roll out the shortcrust pastry on a floured work surface, place it in the springform pan, pulling up an approx. 4 centimeter high edge.
Now whisk the eggs with the cream and milk, season everything with salt, pepper and nutmeg, add the Emmentaler cheese and the bacon and spring onions and mix everything well.
Spread this mixture evenly on the shortcrust pastry base.
Slide the springform pan onto the bottom rail and bake the quiche
