Ingredients

1 sweet potato
2 green onion stalks
1 cup yogurt 3 percent fat at least
2 eggs
1 clove of garlic
1 cup flour (you can use whole or half-flour)
1 teaspoon baking powder
½ as a teaspoon of dry herbs (herb mixture / oregano / thyme)
Salt
Ground black pepper

Preparation
How to make quinoa and sweet potato muffins?
1 Preheat oven to 180 degrees.
2 Place the quinoa in a colander and rinse with running water under the tap.
Transfer to a saucepan with boiling water and cook for 15 minutes to soften.

Meanwhile, grate the sweet potatoes into a bowl.
Chop the green onion and add to the sweet potato bowl along with the quinoa, eggs, garlic and yogurt.
Stir.
4 In a separate bowl, mix flour, baking powder, salt, pepper and dried herbs.
Add to the wet mixture and stir in lightly to obtain a uniform mixture.
It is recommended to avoid over-mixing to maintain airiness.
5 Pour the mixture into a greased or lined muffin tin and bake for 15-20 minutes, or until the muffins are set but a toothpick comes out dry.
