You can simply use a pre-purchased sponge cake - if you have more time, it works just as well with home-baked cakes. The cake is then crumbled and mixed with cream cheese and, depending on the recipe, other ingredients, so that a well-cohesive mass is created. Then you still need

For 8 pieces you need:
150 g cake (e.g. purchased or homemade sponge cake)
30 g soft butter
70 g cream cheese
35 g powdered sugar
For decoration:
150 g dark chocolate couverture
75 g white couverture
as desired: colorful sugar pearls, sprinkles, decorative stars and Co.

Recipe for Cakesicles: How to Make the Small Cakes on Sticks
For the batter,
crumble the cake in a bowl.
In a second bowl, stir the butter, cream cheese and powdered sugar until smooth.
Now add this mass to the cake crumbs and knead everything with your hands to form a homogeneous mass that sticks together well.
Prepare the silicone popsicle molds.
Shape the dough into eight balls that you use to fill the molds.
Press the dough right and firmly so that the surface is as smooth as possible.
Insert a wooden handle at a time and then pull it out again.
Put the molds in the refrigerator for about 30 minutes.
For the glaze,
chop the dark chocolate couverture and melt it in a water bath.
Then take the molds back out of the refrigerator and turn them over.
Carefully press the cakesicles out onto a sheet of baking paper.
Dip the wooden sticks about 1 cm into the liquid couverture (so that they hold better) and put them back into the pre-formed hole of the cakesicles.
Put them in the fridge for another 10 minutes.
Dip the cakes on a stick one after the other in the dark chocolate couverture.
Place the finished cakesicles on a piece of baking paper to dry.
Now chop the white couverture and melt it in a water bath.
Dip the cakesicles diagonally halfway into the couverture and place them back on the baking paper to set.
As long as the chocolate is liquid, you can decorate it with sugar pearls and sprinkles as you like.
Let dry well.
If you want it to go faster, you can also put the cakesicles back in the refrigerator or freezer.
