Poppyseed Cheesecake Recipe: The Ingredients

For 1 springform pan (26 cm) you need:

  • 125 ml milk

  • 50 g butter

  • 2 eggs (M)

  • 125 g of sugar

  • 500 g quark (20% fat)

  • 200 g sour cream

  • 2 heaped tablespoons of cornstarch

  • 2 tsp grated zest of 1 organic lemon

  • 2 tbsp lemon juice

  • 1 egg yolk and 1 tbsp milk for brushing

  • For the shortcrust pastry, sift

    the flour on the work surface and make a well in the middle.

    Add the sugar, salt and egg yolks.

    Spread the butter in flakes on the edge and knead all the ingredients quickly from the edge to a smooth dough.

    Wrap the dough in cling film and put it in the refrigerator for about 30 minutes.

  • For the poppy seed mixture,

    boil the milk with the butter, sugar and lemon zest.

    Then take the pot off the stove and stir in the poppy seeds.

    Cover it and leave it to swell.

  • Preheat the oven to 180 ° C top / bottom heat or 160 ° C fan oven.

    Grease the springform pan with butter.

  • For the quark mass

    Beat the egg whites and sugar with the hand mixer until stiff.
