Here you get two fillings in one: a light, creamy quark and sour cream filling and an aromatic poppy seed layer underneath.
The whole thing is held together by a crispy shortcrust pastry.

Poppyseed Cheesecake Recipe: The Ingredients
For 1 springform pan (26 cm) you need:
For the shortcrust pastry:
250 g flour
75 grams of sugar
1 pinch of salt
2 egg yolks (M)
125 g cold butter
For the poppy seed mass:
125 ml milk
50 g butter
50 grams of sugar
1 teaspoon grated zest of 1 organic lemon
250 g ground poppy seeds
For the curd mass:
2 eggs (M)
125 g of sugar
500 g quark (20% fat)
200 g sour cream
2 heaped tablespoons of cornstarch
2 tsp grated zest of 1 organic lemon
2 tbsp lemon juice

For the shortcrust pastry, sift
the flour on the work surface and make a well in the middle.
Add the sugar, salt and egg yolks.
Spread the butter in flakes on the edge and knead all the ingredients quickly from the edge to a smooth dough.
Wrap the dough in cling film and put it in the refrigerator for about 30 minutes.
For the poppy seed mixture,
boil the milk with the butter, sugar and lemon zest.
Then take the pot off the stove and stir in the poppy seeds.
Cover it and leave it to swell.
Preheat the oven to 180 ° C top / bottom heat or 160 ° C fan oven.
Grease the springform pan with butter.
For the quark mass
, first separate the eggs (this is a very simple trick).
Beat the egg whites and sugar with the hand mixer until stiff.
In another bowl, mix the quark with the sour cream, egg yolks, cornstarch, lemon zest and lemon juice and carefully fold in the egg whites.
Now roll out the shortcrust pastry on a floured work surface, place it in the mold and form a 4 cm high edge.
First distribute the poppy seed mixture, then the curd mixture on top.
Bake the poppy seed cheesecake in the oven (lower rack) for about 30 minutes.
Then whisk the egg yolks with the milk and brush the cake with it.
Then finish baking it in about 40 minutes.
Before enjoying, you should let the cake cool down completely and then put it in a cool place.
