Philadelphia cake

is a classic that is very similar to the New York cheesecake because, according to most recipes, it is not baked, but only chilled in the refrigerator.

Our variant, on the other hand, is baked in the oven, more like a classic German cheesecake and convinces with a particularly creamy filling made of cream cheese (you can of course also use other types of cream cheese than Philadelphia) and sour cream.

If you can't get sour cream, you can replace it with crème fraîche.

Philadelphia Cake Recipe: The Ingredients

For preparation in a springform pan (26 cm) you need:

  • 200 g shortbread biscuits

  • 80 g butter

  • 3 packs of cream cheese (525 g)

  • 200 g sour cream

  • 180 g of sugar

  • 1 packet of vanilla sugar

  • 2 tbsp starch

  • Zest of 1 organic lemon

  • 1 tbsp lemon juice

  • 3 eggs

Philadelphia cake: this is how the creamy cheesecake works

  • Preheat the oven to 170 ° C top / bottom heat.

    Grease the springform pan.

  • For the bottom

    , put the biscuits in a freezer bag and roll over them with the rolling pin.

    Alternatively, you can use the blender to chop the biscuits.

    Melt the butter in the microwave or in a small saucepan on the stove.

    Mix the biscuit crumbs with the melted butter.

  • Spread the biscuit butter mixture in the springform pan and press it firmly to the bottom.

    Bake the biscuit base in the oven for 10 minutes.

  • Meanwhile, prepare the cheesecake filling:

    Mix the Philadelphia, sour cream, sugar, vanilla sugar, starch, lemon zest and juice in a bowl - preferably with a hand mixer so that no lumps are formed.

    Gradually add the eggs and stir them in.

  • Pour the finished cream onto the pre-baked base and smooth it out.

    Now bake the Philadelphia cake in the oven for about 50 minutes.

    Then let them cool in the mold for an hour.

  • Put the Philadelphia cake in the refrigerator for at least 5 hours, preferably even overnight.

    The cheesecake tastes best when it is properly chilled.

Delicious as a topping on the Philadelphia cake: strawberry sauce

If the cool Philadelphia cake is not delicious enough, you can top it with a fruity sauce that gives it the icing on the cake.

This is how it works:

Boil 300 g strawberries (fresh or frozen berries) with 3 tablespoons of sugar in a saucepan for 5-10 minutes until soft.

Mix 1 tablespoon of starch with a little water and add it to the strawberries just before the end of the cooking time.

Puree the strawberries or strain them through a sieve.

Let the strawberry sauce cool down.
