Ingredients

1 packet puffed butter and thawed overnight in the refrigerator
100 grams of ricotta
100 grams of mascarpone
250 ml for 38% sweet cream
4 tablespoons powdered sugar
1 teaspoon vanilla extract
Fruits of the season: strawberries, peaches, blueberries (all fresh and seasonal)

Preparation
How to make puff pastry with mascarpone cream and fruit?
1 Preheat oven to 180 degrees and line a pan with baking paper.
2 Open the puff pastry on a work surface and cut into 6 equal squares.
Place the squares of dough in the lined pan and with the help of the knife form a margin for each one - make an outline in each square 1.5 cm from the sides (do not insert the knife to the end).
Punch holes in the center of each square with a fork (not at the edges) and place in the oven.
Bake for 15 minutes or until the pastries are browned and golden and the edges rise (if the center of the dough has risen during baking, press it slightly with the bottom of a cup).
Remove and cool.
4 Whip the sweet cream with the ricotta, mascarpone, vanilla and sugar to a firm and uniform foam.
5 After the dough squares have cooled, place each of the cream in the center, arrange the fruit on top and serve immediately.
You can sprinkle a little icing sugar before serving.

Tip:
Fruit slices like peaches, nectarines or pears can be slightly charred to enrich the flavor.
Powder the slices with powdered sugar and place in the oven in grill mode at a temperature of 200 degrees for 10 minutes.
