.
Make sure, however, that you only use the
zest from organic lemons
.
Only then can it be guaranteed that the fruits have not been chemically treated, for example with pesticides.
However, this also makes organic lemons mold faster than conventionally grown fruits.

Rub the lemon peel: Here's how
Even if you use organic lemons, you should always wash and dry them beforehand with hot water. In addition, you should only rub the peel thinly so that the white skin underneath is not rubbed off with it, it tastes very bitter. Depending on how fine or coarse you
rub
the
lemon peel
you have several options. If you want it to be as fine as possible, use a rasp or kitchen grater. If you need zests for a recipe, i.e. thin, fine strips of lemon peel, a zest ripper is used. Move this with light pressure over the bowl and pull off thin strips. You can also use lemon peel in larger strips to prepare a punch or for decoration purposes. The easiest way to do this is with a vegetable peeler. But make sure that you only peel off the peel thinly - without the white, bitter skin.
If you ever have lemon peel left over but have no immediate use for it, you can
dry
the coarsely cut peel pieces
and store them
.
Drying works in the air, in the oven or in the dehydrator.
When cooking, you can use the dried bowl like bay leaves: simply cook with them and remove before serving.

Rub lemon zest with the parchment paper trick
But now to the trick that
makes it easier for
you to
rub lemon peel
, because it is effective and clean by hand.
Cut a piece of baking paper or bread paper the size of the grater and place it on top.
Hold the parchment paper and grater with one hand and rub the lemon over it with the other.
The process pushes the baking paper into the gaps, creating small holes in the paper through the prongs.
If you now remove the baking paper, you can simply strip off the lemon peel.
The best: Now the grater can be quickly and easily washed off with water.
No more annoying scraping out of the gaps!

Now you never have to worry again about how much lemon zest is uselessly stuck in the grater and how difficult it is to clean it afterwards.
