Golden and crispy on the outside with melted Grana Padano cheese inside - these arancini balls are perfect for making from the risotto left over from the holiday (and you can also make a quick risotto for the lazy as in the recipe, especially for them).
Either way, the result is addictive and well worth the effort.

Ingredients
For risotto:
½ Chopped purple onion
2 cloves finely chopped garlic
1 round cupcake for risotto
5 thyme branches separated from the leaves
1 cup grated padano
½2 cups
25 grams of butter
Olive oil
Salt
Ground black pepper
To fill:
Grana Padano is cut into 1 * 1 cm cubes
For coating:
½ Crushed flour
2 scrambled eggs
1 cup bread crumbs
Salt
White pepper
Canola oil for frying
For the sauce:
100 grams of crushed tomatoes
5 basil leaves
2 tablespoons olive oil
Salt
Ground black pepper

Preparation
How to make Arancini Grana Padano?

Prepare the risotto:
Fry the onion and garlic in a pan with the butter and olive oil.
Pour the water and bring to a boil.
Add the rice and stir.
Add the cheese, thyme and spices and cook while stirring until the rice is sticky and soft.
Remove to a mixing bowl and refrigerate the mass.

Fill with cheese:
Form the risotto into medium balls and place a cube of Grana Padano in each ball.
Clamps well.

Fry and fry:
Heat a saucepan with deep oil to a temperature of 180 degrees.
Coat each ball in flour, egg and bread crumbs - in that order.
And transfer to the hot oil.
Fry the balls until completely golden.
Remove to a large colander lined with absorbent paper.

Make a quick sauce:
Mix all the sauce ingredients in a bowl and season well.
Taste and adjust seasoning as needed.

Serve:
Transfer the golden balls to a serving plate and serve with the spicy tomato sauce.
