Recipe: Black Forest Cheesecake - The Ingredients
For the preparation in a springform pan (26 cm, makes 12 pieces) you need:
For the ground:
170 grams of flour
40 g cocoa powder
70 grams of sugar
1 pinch of salt
140 g cold butter
1 egg yolk
For the cherry compote:
1 glass of morello cherries
1 packet of vanilla pudding powder
For the quark filling:
1 organic lemon
5 eggs
750 g quark
200 g whipped cream
150 grams of sugar
1 packet of pudding powder

Baking Black Forest cheesecake: this is how the recipe works
For the base
, put the flour, cocoa powder, sugar, salt, cold butter and egg yolk in a bowl and knead the ingredients with your hands to form a smooth dough.
Shape it into a ball, wrap it in cling film and put it in the fridge for about half an hour.
In the meantime,
drain the cherries
for the compote
and collect the juice.
Mix 4 tablespoons of cherry juice with the pudding powder until smooth.
Boil the remaining juice in a saucepan, then take it down and stir in the mixed pudding powder.
Put the saucepan back on the stove and let the mass cook for a minute while stirring.
Then stir in the cherries and let the compote cool down.
Preheat the oven to 160 ° C top / bottom heat or 140 ° C convection and grease the springform pan.
For the quark filling, first
wash the lemon with hot
water
and rub the peel off - this trick is easy and clean.
Separate the eggs.
Mix the egg yolks with the quark, cream, 75 grams of sugar, pudding powder and lemon zest.
Beat the egg whites with the remaining sugar until stiff and carefully fold it into the curd mixture.
Now roll out the dough on a floured surface and place it in the springform pan, also pressing the edges up to the top.
Put half of the curd filling on the bottom.
Then distribute the cherry compote evenly over the curd mixture.
Put the rest of the quark filling on the compote and smooth it out.
Bake the cake in the oven for about 80 minutes.
Let it cool down.
Finally, prepare
the ganache
: finely chop the chocolate and place in a bowl.
Heat the cream and pour it over the chocolate, stirring constantly, until it has melted.
Remove the Black Forest cheesecake from the springform pan and spread the ganache on top.
Put the cake in the cold for at least an hour.
