What is the secret to a good Majdara?
The answer is simple - lots and lots of fried onions.
The recipe has five onions, do not skimp, use them all and fry them patiently until they become brown, caramelized and sweet.
But what will make the good Majdara a winner?
Tamara Aharoni's trick is a very generous addition of fresh herbs - coriander, dill and also green onions that are cooked with the rice and give it a great aroma.
Along with the black lentils and fried onions, Majdara is waiting for you from the dreams that can be an addition but also a complete meal.

Ingredients

¼ Olive oil
½1 tablespoons cumin seeds (whole)
5 white onions, finely chopped
1 cup black lentils
For green rice:
4 tablespoons corn or sunflower oil
2 cups basmati rice
2 cups chopped coriander
4-5 stalks chopped green onions
½ Chopped dill bundle
3 boiling cups
Salt
black pepper

How to make green majdara?

Prepare fried onions: In
a large skillet, heat a quarter cup of olive oil and the cumin seeds.
When the oil is hot, fry the onion in it over a low-medium flame for about 10-15 minutes while stirring, until the onion is browned and caramelized.

Simultaneously cook the lentils:
Rinse them and cook in a pot with plenty of water for about 15 minutes until they soften.
Filter and set aside.

Prepare the rice with the greens:
Heat the oil in a saucepan, add the rice and fry for about 2-3 minutes until it is coated in oil on all sides.
Add the herbs, salt and pepper and mix well.
4 Pour 3 cups of boiling water, bring to a boil, cover the pot and transfer to the lowest heat.
Cook for 20 minutes.
Turn off and leave covered for another 5 minutes.

Stir and serve:
Transfer the green rice to a serving bowl, add the cooked lentils and the fried onion, mix well and serve.
