  • 6 tbsp olive oil

Italian Bread Salad Recipe: How to Make Panzanella

  • First cut the bread into cubes.

    For fresh bread, it is advisable to lightly toast the bread cubes in a pan without fat over medium heat.

    But, as I said,

    stale bread

    is just the right thing to use in salads.

  • Peel and cut the onion into fine strips.

    Peel and finely chop the garlic.

  • Wash the tomatoes, cucumber and peppers and cut everything into cubes.

  • Sort the rocket, if necessary cut off thick stalks.

    Wash and dry arugula and parsley, chop them both up.

  • Mix the vinegar, oil, salt and pepper together.

  • Mix the bread, vegetables, herbs and dressing together and let it

    steep for at least an hour

    until the bread becomes softer.

  • Then stir the bread salad again, sprinkle capers over it if you like and serve.
