has passed you by so far, a brief explanation: It is an Icelandic dairy product that is reminiscent of a mixture of quark and yoghurt in consistency and can also be used in a similar way. with berries. Best of all: this cake doesn't have to be baked, it just goes into the fridge. That's why it's the perfect summer cake that cools you down a bit and tastes wonderfully fresh.

No-Bake Skyr Cake: The Ingredients
For a springform pan (24 cm):
200 g shortbread biscuits
100 g butter
400 ml whipped cream
2 packets of cream stabilizer
1 kg of skyr
4 sachets of gelatine fix
140 g of sugar
2 packets of vanilla sugar
Berries of your choice, e.g.

No-Bake Skyr Cake: Here's How
For the bottom
, first put the biscuits in a freezer bag and crumble them with the help of a rolling pin.
Alternatively, you can of course simply shred the biscuits in the food processor.
Melt the butter and mix it with the crumbled biscuits.
Line the bottom of a springform pan with baking paper and press the biscuit and butter mixture into it as the bottom.
Place the biscuit base in the refrigerator for an hour.
For the filling,
beat the cream with the hand mixer while allowing the cream stiffener to trickle in.
Use a whisk to stir the Skyr with gelatine for one minute.
Carefully fold in the whipped cream, then add the sugar and vanilla sugar and stir everything together.
Now simply place the filling on the biscuit base and put the Skyr cake in the refrigerator for two hours.
To serve,
remove the springform rim and lift the refrigerator cake onto a cake plate.
Then you can decorate with berries of your choice as you wish.
