Watermelon Feta Salad Recipe: The Ingredients

Preparation time:

25 minutes

Serving size:

4 servings

  • 2 tbsp pine nuts

  • 750 g watermelon

  • 200 g cucumber

  • 3 spring onions

  • 150 g sheep cheese (feta)

  • 4 stalks of mint

  • 2 tbsp lemon juice - how to squeeze more out of citrus fruits, read here

  • 1 tbsp balsamic vinegar

  • 4 tbsp olive oil

  • salt and pepper

Depending on your taste, you can of course leave out some ingredients, e.g.

B. the cucumber and the spring onions.

The salad is also a fresh treat with just melon, feta and mint.

Watermelon and feta salad: an ideal summer recipe

  • First, toast the pine nuts in a pan without oil and then let them cool down.

  • Peel and core the watermelon and cut into bite-sized pieces.

  • Peel and halve the cucumber lengthways and cut into slices.

  • Wash and cut the spring onions into fine rings.

  • Crumble the feta.

    Wash the mint and shake dry, then pluck the leaves off.

  • In a bowl, stir together the lemon juice, vinegar, oil, salt and pepper.

    Fold in the melons, cucumber and spring onions.

  • Spread the feta on top and sprinkle everything with seeds and mint leaves.

  • And your refreshing snack or lunch is ready!
