Hot summer winds have already begun to blow in the back of our necks and with them comes the great freedom.
And when the kids are home, they are always hungry and bored.
As a child, summer vacation was for me the best time to learn new things: swim, dance, draw, play and of course how not - cook and bake.
Kids love to create - and summer allows for a fun cooking experience in a free and stress-free atmosphere.
Aside from the fact that the kitchen professions have become more desirable than ever in recent years, I am sure you will agree with me that it is fun, fascinating and exciting to create something beautiful and delicious from the union of materials that are so fundamentally different.

The recipe in front of you is quick and easy and serves as a base for sandwich cookies with a sweet filling - from chocolate cream to marmalade and even ice cream that will upgrade it to a great cookie recipe.

Ingredients
For the cookie dough:
125 grams of soft butter, at room temperature
¾ Cup flour + spoon (115 g)
6 tablespoons powdered sugar (45 g)
2 tablespoons cornflour (20 g)
2 tablespoons (20 g)
For chocolate cream:
50 grams of chopped dark chocolate
50 grams of butter cut into small cubes
3 tablespoons nougat powder or nougat puree (or chocolate with hazelnuts)

Preparation
How do you make chocolate sandwich cookies?
1 Mix the dry ingredients well in a bowl: the flour, powdered sugar, cornflour and cocoa powder.
2 Put the butter in the mixer bowl and mix with a guitar hook (for those who have a strong hand this can be done with a good whisk).
Gradually add the previously mixed dry ingredients until a uniform dough is obtained.
3 Wrap the prepared dough in cling film and leave to cool for about an hour.
4 Narrow the dough into 50 small balls the size of a teaspoon (for those who want to be precise, each cookie weighs 10 grams) and place in baking paper-lined pans at a distance of about 2 cm from each other.
5 Using a small cocoa dusty fork, flatten half the amount of balls (they will be the top of the sandwich).
Sprinkle over a little Demerara sugar and bake at 160 degrees (turbo) for 13-15 minutes (be careful not to burn the cookies over-baking as there is no indication of color).
7 Meanwhile, prepare the cream for the filling.
Melt the chocolate and butter in pulses in the microwave (10 seconds and mix in between).
When the mass is homogeneous, glossy and smooth, add the nougat powder and mix.
8 Remove the cookies at the end of baking and transfer them immediately with a plate or spatula, onto a cooling rack.
When the cookies are completely cold, place a teaspoon of the cream on top of the flat cookies and close over the cookies with the stripes and form a sandwich.

Do not want to make a filling?
The cream can be converted into spreads such as Nutella, Lotus, Peanuts and the like, as well as red marmalades.

Feel like filling your cookies with ice cream?
Narrow double-sized cookies (of a tablespoon, 15-18 grams) and lightly flatten.
After baking and cooling, fill with your favorite ice cream.
