Poke
is English for “poke, poke” and is used in connection with cake recipes, because small holes are poked in the cake of choice, which are then filled with sauce or - as in the following case - with pudding. This makes the result incredibly juicy and you discover another surprise when you cut it. If that doesn't sound delicious? In German one also speaks of hole or knitting needle cake. In this recipe, you first bake a chocolate cake, use a wooden spoon handle to make holes in it and fill them with pudding cream. For the dough:
100 g dark chocolate couverture
4 eggs (M)
200 g of sugar
1 packet of vanilla sugar
1 pinch of salt
200 ml neutral cooking oil (e.g. sunflower oil)
170 grams of flour
2 teaspoons of baking soda
1 tbsp baking cocoa
For the pudding filling and the whipped cream:
1 packet of vanilla pudding powder
70 grams of sugar
450 ml of milk
250 g cream
1 packet of vanilla sugar
some baking cocoa for dusting

Bake a chocolate cake with a pudding filling: this is how the poke cake works
Preheat the oven to 160 ° C top / bottom heat or 140 ° C circulating air.
Line a small baking sheet or baking dish (approx. 25 x 30 cm) with parchment paper.
For the dough,
chop the couverture and melt it in a bowl over a hot water bath.
Beat the eggs with sugar, vanilla sugar and salt for about 2 minutes until frothy.
Then add the melted chocolate and oil.
Sift the flour, baking powder and baking cocoa together and stir everything into the batter.
Pour the batter into the mold and smooth it out.
Bake it in the oven for about 30 minutes.
Then let it cool down completely.
For the filling
mix the pudding powder with sugar, add 4-5 tablespoons of milk and stir everything.
Boil the rest of the milk, stir in the mixed pudding and let everything simmer for a minute.
Then take it off the stove.
Now it's time for the holes: poke a few holes in the chocolate cake with the handle of a wooden wooden spoon.
Pour hot pudding into it, tablespoon at a time.
Put the chocolate poke cake in the cold for 30 minutes.
For the
whipped
cream
, just before serving, whip the cream with vanilla sugar until stiff and spread it on the chocolate cake.
Dust with cocoa powder if desired.
In the rare event that the delicious cake is not eaten right away, you can store it covered in the refrigerator.
So it can be kept for about 2 days.
