Ladino cuisine is a nostalgic cuisine, mixing diverse cultures and cuisines on the Spanish axis, from the Balkans to Turkey, Greece and Cyprus.

During the 16th century in Safed, Ladino lived on all levels - poetry, piyyutim in synagogues, clothing, food and culture in general.

This tradition is slowly returning to the city, through a colorful three-day festival, the culmination of which (at least for us, the food channel after all), is a rich culinary celebration.



Precisely because of this, we asked for a brief overview of the most tempting dishes at the event, got them and the stories behind them, delved into the photos, and went straight to the car.

Dolmas Palsals - Stuffed with a Spanish scent

The days of the festival led the people of the Ascent Tourism Center in Safed to open a pop-up restaurant, led by Aliza Gabay from the "House in Safed" hotel.



Here you will of course find dishes from the attractive and delicious axis of Spain-Turkey-Greece, with an emphasis on fine meat, meatballs, salads, and side dishes.

Highlight - Dolmas palsals, tomatoes, peppers, onions and cabbage stuffed with Spanish spices, rice and meat, which are cooked slowly over low heat and tomato sauce (NIS 49).

Restaurant "Dinner in Heaven" stands on Mount Canaan and offers a magical view and dairy food.



You can routinely find Kelsons here, a nostalgic dish I watched in a more traditional configuration, and ahead of the festival, restaurant owner Yael Brigel decided to make a Balkan pastry filled with kashkaval and spinach cheese, served with roasted peppers and tzatziki (NIS 69).



"The Balkan pastries have taken a place of honor in the Ladino-speaking kitchen," she recounted, "and this pastry reminds me of Grandma's house."

Ladino speakers identify the leek patties with the major holidays in the Jewish calendar - Rosh Hashana and Pesach.

"When I am told Ladino it is the first and main dish that pops into my head," admitted Aviram Zaid, owner of the Harry 8 restaurant in Safed,



The patties that will be served during the festival will be meaty, with boiled leeks and potatoes, and will be served - as you probably understood - in a more contemporary version, along with black tehini and tomato cream (NIS 38).

To Cho Portuguese

One of the desserts that is distinctly identified with the cuisine is Lecho Portuguese, a caramel cream that is an ancient version of the familiar creme brulee.



You can find the nostalgic dessert (34 shekels) at Sumak, the Galilee bistro that opened about a month ago at the Villa Galilei Hotel.

"This is a Ladino-speaking salute to the kitchen," explained chef Gadi Olshansky, "and we serve the dish in a contemporary orientation, alongside raspberries from our garden and edible flowers."

The Ladino International Festival in Safed will last for three days, between July 20 and 22.



It is expected to include dozens of performances in the spirit of Ladino, and connect leading Ladino singers and contemporary singers, on three different stages around the city.



There will be, among other things, lectures, music, guided tours and performances by Jasmine Levy, for example, David Broza, Shimon Perens, Galit Giat and Tryphons, as well as all the wonderful dishes from above.
